Coffee Cake

A treat so delicious you won’t believe it is gluten free and refined sugar free.

This recipe was inspired by RachLMansfield’s original Paleo Coffee Cake Recipe.

Ingredients

Cake

1/3 cup liquid ghee, butter or coconut oil
1/2 cup coconut sugar
2 eggs
1 very ripe banana mashed (banana bread ripeness)
2 cups almond flour
1/2 cup 1:1 gf baking flour
2 tsp baking powder
2 tsp cinnamon

Topping

1/2 cup almond flour
2 tbsp liquid ghee, butter or coconut oil
2 tbsp coconut sugar
1 tsp cinnamon

Instructions

  1. Using square cake pan line with parchment paper or grease the pan. Preheat oven to 350F.

  2. Begin with cake. Mix all wet ingredients in large bowl + sugar. Mix with whisk until smooth.

  3. Add in dry ingredients and stir until well combined. Pour into prepped pan and set aside.

  4. Mix liquid ingredients for topping including sugar then fold in the flour. Then spread over mixture in pna. Can be helpful to use hands for the crumbing.

  5. Bake for ~22-25 min, until fork or toothpick comes out clean. Let cool at least 10 min and enjoy!
